Chicken and rice is a classic gentle-on-the-stomach combination, and it adapts easily to a reflux-friendly approach with a few adjustments to cooking method and seasoning.
The base method
Baking or poaching chicken breast rather than frying keeps fat content low. Poaching in a light broth (with herbs like thyme or bay leaf rather than a spicy seasoning blend) also keeps the chicken moist without added fat. White or brown rice, cooked plain or with a small amount of broth for flavor, rounds out the dish.
Three variations
- Poached chicken and rice with steamed carrots and a sprinkle of parsley
- Baked chicken thighs (skin removed) with rice and sautéed spinach in a small amount of olive oil
- Shredded poached chicken over rice with a light, non-citrus herb dressing (olive oil, dill, a pinch of salt)
Seasoning without the trigger
Herbs — thyme, rosemary, dill, parsley, basil — add real flavor without the reflux risk that comes with chili, black pepper in large amounts, or heavy garlic for people who are sensitive to it. A small amount of low-sodium soy sauce or a splash of low-fat broth can replace acidic marinades like lemon or vinegar-based ones.
